Gluten Free Vegan Pumpkin Spice Muffins. These naturally sweetened pumpkin muffins have all those warm spices we love and are sure to brighten anyone’s day. They are simply FALL-tastic!
These past 6 months have been a very hard transition for our family. Some of you may remember this post that I shared back in March, about growing our family through foster adoption. I opened up about how drastic our lives changed overnight. Everything turned upside down and we quickly realized we couldn’t make these big changes alone.
We had an abundance of family and friends step up in our time of need and I can’t begin to tell you how thankful we are for each one of them. Bringing us gluten free dinners to feed our now family of 6, making Costco runs for us, dropping off bags of groceries and clothes, text messages to ask us how they could be praying for us, long hugs while letting out all the tears. Countless times I was reminded of how impactful even the simplest of things are when you are going through the hardest transition of your life. I had a greater sense of the true need for community.
I share all of this because I know how precious it is when someone says, “I’m thinking about you” or “I love you” or “thank you” through something as comforting as a homemade meal. It says more than those simple words. It makes you feel valued and cared for. Life is hard sometimes, really hard, and taking the time to brighten someone’s day through a simple gesture, could mean more than you know. Maybe your friend just became a new mom or your sister found out some difficult news or your neighbor just moved in and doesn’t know anyone. We all know someone in our lives that could use a simple care package.
Care packages don’t have to be fancy and they don’t have to take a lot of time. I’ve partnered with Bob’s Red Mill to create a recipe to be shared with someone as a sweet act of kindness. My love language is baked goods and so usually muffins or a plate of fresh-baked cookies are my go-to. What’s yours?
To make these gluten free vegan pumpkin spice muffins, I used Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. It really does make gluten free baking so much easier because the flour blend is ready to use in just about any of your recipes. Cakes, muffins, quick breads, cookies. It’s got great flavor and great texture too. These fall-inspired muffins are gluten, dairy, egg and refined sugar free. They are also a perfect pumpkin recipe to kick off pumpkin season!
I decided to share these muffins with our dear friends who have been on this adoption journey with us from the very start. Praying, listening, encouraging. They are like family, pretty much an aunt and uncle to our kids. They have come over a few times now to watch all four our crazy littles so my husband and I can get out for a much needed date night. We’ve had so many pour into us and since it’s hard for us to pour into others right now, we can give back by saying, “thank you” through homemade treats. Care packages are all about showing someone you care. We care deeply for our friends and are so thankful for their support in our lives.
To package up these beauties for our friends, I picked up this simple gift box at Target and lined it with parchment paper. I placed the muffins inside, adding additional cupcake liners. The gold twine I used to tie the box was something I already had on hand {use what you’ve got!} and then added a little thank you card. So easy and took no time to put together.
It doesn’t take much to brighten someones day. I PROMISE these gluten free vegan pumpkin spice muffins will bring a smile to anyones face! Homemade treats were made to be shared and they really are the perfect way to just say, “I’m thinking about you.”
- 1 1/2 cups Bob’s Red Mill gluten free 1-to-1 baking flour
- 1/4 cup Bob’s Red Mill ground flaxseed meal
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 3/4 cup unsweetened almond milk
- 2/3 cup pumpkin puree
- 1/2 cup Bob’s Red Mill coconut sugar or brown sugar
- 1/4 cup pure maple syrup
- 1/4 cup grape seed oil or sunflower seed oil
- 1 teaspoon pure vanilla extract
- Preheat oven to 350 degrees. Line muffin tin with paper liners or spray with nonstick cooking spray.
- Whisk together flour, flaxseed meal, cinnamon, ginger, nutmeg, allspice, baking powder, baking soda and salt. Set aside.
- In large mixing bowl, add almond milk, pumpkin puree, coconut sugar, maple syrup, oil and vanilla extract. Stir until smooth.
- Add flour mixture and stir muffin batter until combined. Divide into prepared muffin tin. Bake muffins 18-22 minutes, until golden brown and center is set.
- Place muffins on cooling rack to cool completely. Store in airtight container.
