Oh how I love Christmastime! I’m just soaking up every minute of this season. The smell of the fresh Christmas tree in our living room, covered in all of the kids homemade ornaments. The endless list of must-watch Christmas classics. The smell of sugar cookies baking in the kitchen, just waiting to be decorated.
One of my favorite places to shop for all of my Christmas essentials is Target. Actually, I shop there for pretty much everything cause I’m completely addicted to that place, but I’m there even more this time of year. Picking up stocking stuffers for my kids, searching for just the right gifts for my nieces and nephews and finding a few new decorations for our dining room table.
I’m also busy doing the grocery shopping too. Another reason to love Target. One stop shop! Our local Target isn’t a Super Target, but they do have a pretty good selection of refrigerated items, frozen foods, pantry staples and fresh produce. I’m always so excited to see new gluten and dairy free items on the shelves too!
Good Karma has just entered the world of Target and their creamy Flaxmilk is now available in select stores. Not only is Good Karma’s Flaxmilk a rich source of omega-3’s, it is free of the top allergens. It comes in unsweetened, original, vanilla, unsweetened + protein and unsweetened vanilla + protein. They also have dairy free yogurt and drinkable yogurts, which are packed with probiotics and fantastically delicious.
My friends over at Good Karma gave me the super fun opportunity to create a holiday table setting, featuring items found at Target. Yes please! I was also asked to develop an allergen free recipe, using their flax milk. I knew right away that the cinnamon roll coffee cake would be the centerpiece and the table would have a Christmasy rustic charm.
Simple is the way I roll. I’m not a fancy girl, I just like things to be cute, warm and inviting. I found the table runner and the placemats for our table in the dollar section, right when I walked into Target. Always my first stop! Love the green and red plaid. See, you don’t have to spend a lot to make your holiday table beautiful.
I picked out simple place settings and gold silverware to add a little bling. On each plate I used a bright green apple with a little festive twine. Edible garnishes are great! The wood platter is probably my favorite piece. I’m using it for a cake stand, but I just know it’s going to get so much use. I fell in love with the wood sparkly trees too. The added greenery is actually from leftover branches from our fresh Christmas tree. You can stop at any local tree farm and they usually have free branches. Lastly, I randomly placed a few ornaments for even more sparkle and color. So festive and fun!
Let’s get onto that cinnamon roll coffee cake that I know you all can’t wait to try. Cinnamon rolls are a fave in our house, especially when it comes to Christmas morning. I adore them too, but they can be time consuming. That’s what I love about this cinnamon roll coffee cake. Baked in a bundt cake pan and so much easier to put together. Between layers of light vanilla cake, you still have layers of cinnamon sugar. The sugar even gets caramelized on the outside, making this breakfast treat insanely delicious.
Once cooled, this gorgeous coffe cake is covered in a simple glaze. Can’t have cinnamon rolls without frosting. To serve with the coffeecake, I made a yummy fruit salad. Fresh strawberries, granny smith apples and green grapes {keeping with the red and green theme, of course}. I also added fresh mandarine juice and zest. Brightens the salad right up!
My holiday brunch table just makes me happy. It’s rustic and welcomes you right in. I want to sit down at this table, drink my coffee and have a slice of gluten free vegan cinnamon roll coffee cake with my family. That’s what the holidays are for. Being with those you love. Passing down traditions and creating new memories.
- 3 cups Sarah's gluten free flour blend
- 1 cup cane sugar
- 1/4 cup brown sugar or coconut sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon sea salt
- 1 1/2 cups Good Karma unsweetened flax milk
- 1 1/2 tablespoons white vinegar
- 1/2 cup grape seed or sunflower seed oil
- 1 1/2 teaspoons pure vanilla extract
- 1/4 cup cane sugar
- 1/4 cup brown sugar or coconut sugar
- 2 teaspoons ground cinnamon
- 1 1/2 cups sifted powdered sugar
- 1-2 tablespoons Good Karma unsweetened flax milk
- Preheat oven to 350 degrees. Coat bundt cake pan with nonstick cooking spray. Set aside.
- In large mixing bowl, whisk together flour, sugar, brown sugar, baking powder, baking soda and salt.
- Mix flax milk and vinegar together in separate bowl. Add oil and vanilla. Mix and pour over flour mixture. Stir batter just until smooth.
- To make cinnamon swirl mixture, mix together sugar, brown sugar and cinnamon.
- Scoop 1/3 of cake batter into prepared bundt cake pan. Spread into even layer. Top with layer of 1/2 of cinnamon sugar mixture. Using butterknife, swirl cinnamon sugar into cake batter.
- Top with additional 1/3 of cake batter and sprinkle on remaining cinnamon sugar mixture. Swirl into batter. Top with remaining cake batter and smooth out until even.
- Bake cake 50-55 minutes, depending on bundt cake pan. When toothpick inserted into cake comes out clean, remove from oven and place on cooling rack.
- Allow cake to cool in pan 15 minutes. Invert cake onto cooling rack to cool completely.
- To make glaze, whisk together powdered sugar and flax milk. When smooth, drizzle over cooled cake.
- Let glaze set before slicing. Slice and serve cake.

Do you have to use the flax milk or would any non dairy milk substitute just fine?

Yes, any non-dairy milk will work just fine. I wouldn’t recommend coconut milk from the can, as it’s too thick.

Made this last night to have Christmas morning. Sooooo good! I glazed it in the morning. It’s moist, delicious, and the top had a little crunch.
I didn’t have a Bundt pan so I used a greased 9 inch square glass baking dish and baked it for 50 min. Came out perfect.
