Summertime = popsicle time! My mom would make homemade popsicles for us all the time. I can still remember enjoying those icy-cold orange juice pops, as they melted down our hands. Now I get to make them for my kids. A few of our faves are these creamy strawberry popsicles and these peach berry yogurt popsicles. Both dairy free and both totally refreshing on a hot summer day!
Being that it was over 100 degrees outside almost everyday this week, I was more than excited to have these fudgsicles on hand. The creamiest dairy free popsicles I’ve ever sunk my teeth into. Made with soaked cashews, coconut milk and lots-o-chocolate, you just can’t go wrong. They are even more decadent than the ones I remember from my childhood.
Using my trusty popsicle molds, these come out beautiful every time. Just think of these as the “grown-up” version of fudgsicles, that just happen to be dairy free!
- 3/4 cups raw cashews, soaked
- 1/2 cup dairy free dark chocolate chips
- 1 1/2 cups full-fat coconut milk, shaken
- 3 tablespoons cane sugar
- 2 tablespoons high quality cocoa powder
- 1/2 teaspoon vanilla extract
- pinch sea salt
- Soak raw cashews 3-4 hours or overnight in refrigerator. Drain and set aside.
- In microwave-safe bowl, place chocolate chips and microwave on high 30 seconds. Stir and microwave additional 15 seconds. Stir until smooth. Let cool to room temp.
- In high powered blender or food processor, add soaked cashews, coconut milk {mixture of coconut cream and coconut water}, cane sugar, cocoa powder, vanilla and salt. Blend on high 1-2 minutes, until creamy.
- Add melted chocolate chips to cashew mixture. Continue to blend until smooth.
- Pour into popsicle molds. Insert popsicle sticks into mold and place in freezer to completely set, 3-4 hours or overnight.
- To remove popsicles, run under water for 10-15 seconds. Release popsicles from mold and enjoy!
