We’ve all seen recipes on pinterest for chia seed pudding. Chia seeds are basically little seeds that work their magic when added to liquid {such as coconut milk}. It thickens and creates this pudding texture, similar to tapioca pudding. Only way healthier because chia seeds are packed with fiber!
This recipe is no ordinary chia seed pudding recipe. I’ve added Bob’s Red Mill hemp seed hearts, which are a complete protein. 5 grams of protein in just 2 tablespoons. They are also a great source of omega-3’s, just like those chia seeds. The slightly nutty flavor is super tasty in smoothies, on salads and in muffins. A little sprinkle of hemp hearts never hurt anyone.
This dairy free strawberry vanilla protein pudding can be made the day before so it’s ready as a snack, a dessert, or a morning treat. Layers of vanilla pudding and fresh strawberries. Any time of day is a good time to enjoy a bowl of dairy free strawberry vanilla protein pudding!
- 1 1/2 cups lite coconut milk
- 2 tablespoons pure maple syrup
- 1 teaspoon pure vanilla extract
- 3 tablespoons Bob's Red Mill hemp seed hearts
- 3 tablespoons Bob's Red Mill chia seeds
- 1 cup fresh strawberries, diced
- 1 teaspoon pure maple syrup
- Mix together coconut milk, 2 tablespoons maple syrup, and vanilla extract. Stir in hemp hearts and chia seeds.
- Cover pudding and refrigerate 3-4 hours or overnight. Pudding will thicken as it chills.
- When ready to serve, dice strawberries and coat with teaspoon maple syrup.
- In serving dishes, layer pudding and strawberries. Repeat layers. Serve chilled.
