I'm always up for trying new ingredients to make my gluten free baked goodies even better. When I read this blog post on Gluten Free Girl and the Chef about pysillium husk, I was very intrigued! I had never heard of psyllium husk. It sounded weird and I wasn't even sure I was saying it right. Gluten Free Girl came to the rescue and took away all of my uncertainty. She has a great video explaining how it is the perfect ingredient to bind your bread dough ... read more
mom, what’s for breakfast?
The first question of the morning, "mom, what's for breakfast?" Sometimes I wish I could say back to them, "well, what are you going to make for mommy?" Oh to live in a bed and breakfast and be served a hot, freshly cooked breakfast everyday. No slaving away over a hot stove, flipping pancakes, and then cleaning up the giant mess. That would be the life! Let's get real here. Most mornings consist of cereal or oatmeal. Quick. Easy. Well, for ... read more
tropical kale smoothie
We are a smoothie-lovin' family! For breakfast, lunch, or dinner. They can be so filling and FULL of good stuff! One of my favorite things to add to a fruit smoothie...fresh kale or spinach leaves. Your kids will never know you sneaked it vitamin-packed veggies. But honestly, what kid wouldn't like a bright, green smoothie? Just tell them it will give them super powers! I never measure anything when I make smoothies. A little bit of this, a scoop of ... read more
chocolate peanut butter fudge
I was craving a simple, bite-size chocolate treat. So I mixed up a few of my favorite ingredients, poured it into a pan, and let it set in the fridge. About an hour later, I took a spoon and dug out a little scoop. Love. Creamy, chocolatey, and not too sweet (the way I like it). You can taste every ingredient...the honey, the chocolate, the peanut butter, and the coconut oil. They all work perfectly together. I used Trader Joe's semi-sweet chocolate ... read more
gluten free zucchini muffins
School mornings can be so not a pretty sight. It's early and no one wants to be up yet. You're telling your kids to get dressed for the 10 millionth time. Smelling their breath to see if they really did brush their teeth. Trying to pack their lunch and get yourself ready...which is a rarity. Don't even get me started on breakfast. My kids don't like eating right when they wake up so it's ALWAYS a battle to get them to get food in their little bellies before we ... read more

Can't believe we have a 1st grader in our house! What in the world? Kyri is getting more beautiful, the older she gets...as much as I can't stand her growing up. We took her to her class in the morning, met her teacher, and said our goodbyes. Kaden was sad to be home all day without ... read more

gluten free ice cream cookie sandwiches
There is always room for ice cream! At least in our house. Even when it's cold outside, ice cream is still just as satisfying. Creamy goodness at it's finest. I'm also a big fan of fruity sorbet, or better yet...coconut milk ice cream! Lord, help me. I could eat that stuff for every meal. Now I ask you, could there be anything better than just a big bowl of simply delicious ice cream? Oh yes there is...when you put it between two soft, chewy fresh ... read more

We had a super awesome dinosaur birthday party for a very special 3 year old...our sweet boy, Kaden! I still can't believe he is 3. People always say, "they grow so fast!" It is so not a cliche, it's so true! I remember the day I looked into those baby blue eyes. His tiny 7-pound body, all wrapped up in my arms. Precious memory I will never forget. Now he is a crazy, wild, little love. Kaden may be ALL boy and a handful at times, but he sure does ... read more
gluten free honey oat bread
I may have shed a few tears when I found out about my gluten allergy. The thought of not being able to eat bread was heartbreaking. Is there anything more lovely than a loaf of fresh baked bread? It is quite stunning. And don't get me started on the smell that fills your house when there is bread baking in the oven. Intoxicating! Now I knew that gluten free bread did exist, but I had a hard time believing it would come anywhere near my mom's homemade yeast ... read more
