Coming up with a recipe for gluten, egg, and dairy free brownie should be pretty easy...you would think! I don't know how many times I've baked up a batch of brownies that were just not what I was going for. I didn't want them to be too cakey or too oily. I just wasn't getting the balance I was looking for. Baking with food allergies, I've realized, is an adventure. Many hurdles to overcome along the way. My motivation...I was in need of a good go-to brownie ... read more
gluten free vegan chocolate glazed banana muffins
These chocolate glazed banana muffins are pretty amazing. Scrumptious banana muffins, topped with a simple vegan chocolate ganache. Yes, vegan ganache does exist! I use So Delicious coconut milk coffee creamer (the French vanilla is my favorite) with dairy free chocolate chips. It's out of this world! This is my new EASY recipe for banana muffins (delightful even without the chocolate ganache). I'm loving the texture. The coconut oil adds great flavor too. ... read more
gluten free vegan waffles
I like my waffles crispy on the outside and chewy on the inside. It's the perfect combination. Served piping hot, with a little Earth Balance buttery spread and pure maple syrup. No high-fructose, fake stuff. That's a big no-no in our house. It's all about the real deal. I also enjoy a little fresh fruit on top of my waffles. Strawberries, blueberries, bananas. What do you fancy? In the past few months, I've tried to make countless waffle recipes gluten, egg, and dairy free with no ... read more

Coming up with my own recipes is an adventure...especially with baking. The measurements have to be just right. There can't be too much liquid or too much oil. Baking gluten free and without eggs makes it even more exciting! Maybe exciting isn't the best word to use. It's always a little nerve-wracking waiting for the oven timer to go off and then taking a peak inside. Did they rise? Did they fall? Is it a masterpiece or a big, fat disaster? No ... read more

gluten free vegan raspberry hand pies
Does anyone remember those "home run pies" you would get as a kid? They were about 50 cents at the grocery store and came in all different flavors. My favorite was cherry. Or maybe chocolate pudding! It was a pretty cool treat because it was pie, that you could hold in your hand. We would get super excited when my mom would buy them for us. They may have been about 90% artificial, but they sure did taste good! I certainly don't miss mr. home run. Not when I can have these gluten ... read more
