Waffles for breakfast. Waffles for dinner. I love making breakfast for dinner. Don't you? We recently bought a super awesome waffle maker, our first one since going gluten free. It's a Waring Pro Rotary Waffle Maker and suites our family quite well. Seriously, the best waffle maker out there. Deep pockets for pools of maple syrup. Yes, pools. My husband is now asking for waffles every Friday morning (his day off). It's hard to say no ... read more
muddy buddies
If you've never had muddy buddies, then you are missing out! The name really doesn't say much and I have no idea where it came from...but who cares, it's chocolate and peanut butter! It's the easiest sweet and crunchy snack. A little melting, mixing and shaking. This would be a great recipe to make with your kids. Simple and fun to make! Muddy buddies are made with ingredients you most likely already have in your pantry. Makes them very convenient! Rice ... read more
gluten free double chocolate chip cookies
When I first saw this recipe, I was a little curious about one of the ingredients...instant chocolate pudding mix. I don't actually use pudding mix all that much, but I happen to have a box in my pantry. I was up for giving them a try! With all of the gluten free cookies that I have baked, I still didn't have my favorite chocolate cookie recipe. They would usually end up a bit too crunchy. I'm not sure many people prefer a hard cookie over a soft, chewy one. ... read more
gluten free yogurt pancakes
Finding the perfect gluten free pancake recipe....has not been an easy task. I have tried numerous recipes and they are almost always either dry and crumbly or in no way fluffy. Such a bummer when you have this expectation of what they should taste like. I'm all about the texture, so I was on the search for a fluffy, yet chewy pancake. Kyri and Kaden LOVE pancakes so this was a must! I came across this recipe on pinterest and thought I would give it a try, using my ... read more
gluten free mini blueberry scones
There is something so comforting about smelling freshly baked treats in the morning. Muffins, biscuits, scones. I would have a hard time choosing which is my favorite. It's probably a close tie between banana muffins and blueberry scones. I just love baking in the morning for my family. I don't have many opportunities with school and my husband's work schedule. So when I can, I will usually make cheesy scrambled eggs, a fresh fruit salad, and bake up a pan of ... read more
gluten free nutty granola
Let's talk about oats. If you have celiac disease, you can't just go out and buy the standard rolled oats. You see, just about all oats are manufactured alongside wheat and so there is pretty much a guarantee that there is cross-contamination. When oats are grown in the field, they don't contain any gluten...it just gets mixed in when they are processed. Big bummer. So in our house, we only cook with certified gluten free oats. They do cost a bit more, but we sure can't live without steal ... read more
gluten free peanut butter chex treats
Our family loves Chex cereal! Most of them are certified gluten free, which makes this mom happy. We seem to always have a box in our pantry. Rice Chex, Corn Chex, or my husband's favorite...Cinnamon Chex! Last summer, I discovered that I could use chex to make marshmallow treats. They have more crunch than the traditional rice crispy treats. Now I'm wondering why I never thought to add peanut butter to them? I'm a big fan of any dessert that ... read more
gluten free drop biscuits
My heart longs for fresh rolls, light biscuits, gooey cinnamon rolls, and moist quick breads. I love the process in making them and I love the process of eating them. My family gets really excited when they see a basket of cheesy rolls on the table at dinnertime. Bread, oh sweet bread. It really is the perfect compliment to any meal. Doesn't it feel good to sink your teeth into a big slice of warm banana bread, slathered with butter? One thing I love about these ... read more
gluten free peanut butter oatmeal chocolate chip cookies
Baking gluten free cookies has been quite the feat. I can't even tell you how many batches have been a big, fat flop. They would just melt into one big crusty mess or crumble when I would pick them up. So disappointing. Cookies are one of my favorite things to make so I was not about to give up! I began taking recipes I love and using my gluten free flour blend. I can proudly say I have had countless cookie victories! There are a few recipes that without that ... read more
gluten free baked chocolate donuts
I thought I would never eat another donut again. Donut shops don't exactly have many options for us gluten free folks. So I went out and bought myself a donut baking pan and made myself (well, my family too) a batch of gluten free chocolate donuts. Not only are they baked, but they are chocolaty goodness at it's finest! Hot out of the oven and oh so crispy on the outside. Smothered in a chocolate ganache that is to die for. Don't wait for breakfast ... read more
