Berry Smoothie Popsicles. Made with strawberries, blueberries, bananas and vanilla flaxmilk. These healthy smoothie popsicles are perfect for those hot summer days!
Summertime is for homemade popsicles. I always have a batch of fruit popsicles or dairy free fudgsicles in the freezer. They are a cool, quick snack for the kids and they are healthy too! No need for refined sugar when you have fresh, sweet summer fruit. It’s fun to let the kids come up with their own popsicle creations. So many possibilities!
I discovered Good Karma Flaxmilk last year and I’ve been loving it ever since! Their flaxmilk is a rich source of omega-3’s and is free of the top allergens. We are in the full of swing of summer here in hot California so we are doing whatever it takes to stay cool. Popsicles for breakfast sounds like a good way to beat the heat! I created these berry smoothie popsicles with frozen banana, blueberries, Good Karma Vanilla Flaxmilk and lemon juice. I added slices of fresh strawberries to the popsicle mold before pouring in the berry smoothie. So pretty.
These berry smoothie popsicles were a huge hit with my kids. Not only are they a healthy frozen treat, they are also so refreshing. I’ll be serving these up all summer long. They’re perfect for 4th of July too!
- 2 frozen bananas
- 1 cup frozen blueberries {I used wild blueberries}
- 1 cup Good Karma Vanilla Flaxmilk
- 1-2 tablespoons pure maple syrup or honey {optional}
- 1 tablespoon lemon juice
- 1 1/2 cups sliced fresh strawberries
- In high-powered blender, add frozen bananas, frozen blueberries, flaxmilk, maple syrup and lemon juice. Blend on high 1-2 minutes, until smooth and creamy.
- Place 4-6 strawberry slices into each popsicle mold. Pour smoothie mixture over strawberries until each mold is filled.
- Insert popsicle sticks into mold and place in freezer to completely set, 3-4 hours or overnight.
- To remove popsicles, run under water for 10-15 seconds or leave on counter 5 minutes. Release popsicles from mold and enjoy!

What a fun giveaway! I love Good Karma’s flax milk. I agree that it has a very pleasant taste, not strong at all. Can I ask where you found your popsicle molds? I like the way you’ve used wooden sticks with them…the plastic ones can be flimsy.
