With school starting next week, my mind has gone straight to school lunch mode. What snacks to pack for my kids. Store bought may be easy, but sometimes it’s worth the time to make snacks from scratch. I like know every ingredient too. These homemade gluten free pizza crackers are made with my gluten free flour blend, almond flour and Bob’s Red Mill golden flaxseed meal. A good start to a healthy gluten free cracker.
This golden flaxseed meal from Bob’s Red Mill is such a versatile ingredient. It can be added to breads, muffins, crackers, pancakes, smoothies and even cookies too. Full of omega-3 fatty acids and fiber, it adds a nutritious nuttiness to so many recipes. I’ve been a fan of flaxseed meal for years and I love the golden version, as it’s easier to hide from my kids. They never know when I’m sneaking in the good stuff.
Homemade crackers aren’t as difficult as you would think. Once the dough is mixed together, you just place it on a parchment lined cookie sheet, cover with another piece of parchment and roll it out. Slice with a pizza cutter, sprinkle on a little salt and bake in the oven. Just a couple steps to crispy, gluten free crackers. You get to the choose the flavors too!
My kids were HUGE fans of these gluten free vegan pizza crackers. They could smell them in the oven baking and knew something good was coming. Without telling my husband, I asked him to try one and tell me the flavor. Without hesitation, he said, “pizza.” Winner, winner! The savory flavors of pizza all wrapped up in these little crispy crackers.
- 1 cup Sarah's gluten free flour blend
- 1/2 cup Bob's Red Mill almond flour
- 3 tablespoons Bob's Red Mill golden ground flax meal
- 1 teaspoon ground garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 3/4 teaspoon sea salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon crushed red pepper flakes {optional}
- 1/3 cup cold water
- 1 tablespoon grape seed or olive oil
- 1 tablespoon tomato paste
- 1 tablespoon pure maple syrup
- additional sea salt, for sprinkling
- Preheat oven to 400 degrees. Line large baking sheet with parchment paper.
- Whisk together flour blend, almond flour, flax meal, garlic, oregano, basil, salt, baking powder and crushed red pepper flakes.
- In separate bowl, mix together cold water, oil, tomato paste and maple syrup. Add to flour mixture. Stir until dough comes together. If dough seems dry, add an additional 1-2 teaspoons cold water.
- Transfer dough to parchment lined baking sheet. Place another piece of parchment paper on top of dough. Roll dough out into a very thin rectangle, about 1/8 inch thick.
- Gently peel away top sheet of parchment paper. Using pizza cutter, cut dough into 1-inch crackers. Sprinkle with additional salt.
- Bake crackers in oven 15 minutes. Rotate pan and gently separate crackers, using knife or metal spatula. Bake an additional 15 minutes, until golden brown and crispy.
- Remove crackers from oven and place on cooling rack. Cool completely. Store in airtight container. Crackers will stay fresh 1-2 weeks.
