Gooey, chewy granola bars. Just the way I like ’em!
I have a hard time buying store bought granola bars sometimes because of the price, especially the gluten free ones. It’s so inexpensive and easy to make your own. From scratch, mixing in whatever ingredients you have on hand. A little chocolate, some nuts, even dried fruit. Endless possibilities and your kids can even make this easy-peasy no-bake snack.
Peanut butter and pretzels. They just go together. Mix them into a granola bar recipe and magic happens! The creamy peanut butter, the crunch from the chopped gluten free pretzels. I couldn’t do the peanut butter and pretzel combination without the addition of mini chocolate chips. Salty and sweet, these soft gluten free granola bars bring a little bit of happiness to that 3:00 snack attack. One of these and you’ll be good to go!
- 1 3/4 cups Bob's Red Mill certified gluten free rolled oats
- 1 cup chopped gluten free pretzels* {such as Gratify}
- 1/2 cup Bob's Red Mill almond meal/flour
- 1/2 cup dairy free mini chocolate chips {such as Enjoy Life}
- 3/4 cup creamy peanut butter, almond or sunflower seed butter
- 1/2 cup honey or maple syrup
- 1 tablespoon refined coconut oil, melted
- 1/2 teaspoon pure vanilla extract
- Prepare 8x8-inch square baking pan by lining with parchment paper. Set aside.
- In large mixing bowl, combine rolled oats, chopped pretzels, almond meal and chocolate chips.
- In separate bowl, stir together peanut butter, honey, melted coconut oil and vanilla. Pour over oat mixture and stir until completely coated.
- Press peanut butter oat mixture into prepared baking pan. Place in refrigerator to set, about an hour.
- When granola bars are firm, remove from pan by lifting out with parchment paper. Slice into bars.
- Store in refrigerator for a firm granola bar.
