gluten free vegan soft pumpkin cookies
- 2 cups Sarah’s gluten free flour blend
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon sea salt
- 1 1/2 cups pumpkin puree
- 1/2 cup canola or sunflower seed oil
- 1/2 cup organic cane sugar
- 1/4 cup organic brown sugar
- 1/4 cup pure maple syrup
- 1 teaspoon pure vanilla extract
- 2 1/2 cups organic powdered sugar
- 2 1/2 tablespoons coconut milk
- 1 tablespoon Earth Balance vegan butter, melted
- 1/2 teaspoon pure vanilla extract
Preheat oven to 350 degrees. Line baking sheets with parchment paper. Sift together flour blend, baking powder, baking soda, cinnamon, ginger, nutmeg and salt. Set aside. In large mixing bowl, combine pumpkin puree, oil, sugar, brown sugar, maple syrup and vanilla. Add the flour mixture and mix until combined. Drop tablespoon-size scoops of cookie dough onto prepared baking sheet. Slightly flatten to 2-inch circles. Bake for 9-11 minutes. Place cookies on cooling rack to cool completely.
While cookies are cooling, make vanilla glaze. Mix together powdered sugar, coconut milk, melted butter and vanilla. Stir until smooth and creamy. Place glaze in piping bag with round tip. Pipe onto cooled cookies.
