Gluten Free Vegan Brownie Ice Cream Sandwiches. Chewy brownie cookies, filled with creamy dairy free chocolate ice cream. Incredibly decadent and insanely delicious!
I will tell you, these ice cream sandwiches are seriously the most amazing ice cream sandwiches I have EVER had. That’s including the ones made with real dairy ice cream. Yeah, the ones I used to be able to eat, back in the day. These are not only dairy free, but they are also gluten and egg free too. No one will be able to tell as these chocolate ice cream sandwiches are too good to even put into words.
What makes these gluten free vegan brownie ice cream sandwiches so tasty? It’s those soft, chewy, oh so chocolaty brownie cookies. Yes, brownies made into cookies. They do exist! You can easily bite into these ice cream sandwiches, as the cookies stay soft, like a fudgy brownie. The trick? Using a liquid fat in the cookie dough that won’t harden when frozen. It really helps keep the brownie texture.
The other key element here is a creamy, over the top chocolate ice cream. I went with what I believe to be the best dairy free chocolate ice cream. So Delicious cashew milk chocolate ice cream. It is the closest I have tasted when it comes to texture and flavor of a dairy-filled chocolate ice cream. It’s insane! You could also use your favorite vanilla dairy free ice cream in these ice cream sandwiches, if that’s your preference. Mint chip ice cream would be pretty epic too!
No matter what, every bite of these gluten free vegan brownie ice cream sandwiches will be just as good as the one before. I can promise you that!
- 1 cup Sarah's gluten free flour blend
- 1/2 cup Bob's Red Mill almond flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/4 cup dairy free chocolate chips
- 1/4 cup grape seed or sunflower seed oil
- 1/2 cup good quality cocoa powder
- 3/4 cup cane sugar
- 1/4 cup pure maple syrup
- 1/4 cup warm water
- 1 teaspoons pure vanilla extract
- 2 pints dairy free chocolate ice cream {I used So Delicious chocolate cashew milk ice cream}
- Preheat oven to 350 degrees. Line large baking sheet with parchment paper.
- In medium bowl, Sift together flour blend, almond flour, baking powder and salt. Set aside.
- Melt chocolate chips. Pour into large mixing bowl, along with oil and cocoa powder. Stir until smooth.
- Add sugar, maple syrup, warm water and vanilla to chocolate mixture. Mix well. Add flour mixture and stir until dough is well combined.
- Scoop dough onto prepared baking sheet, using cookie scoop. Bake cookies 11-12 minutes.
- Cool cookies on baking sheet 5 minutes. Place on cooling rack to cool completely.
- To assemble ice cream sandwiches, allow ice cream to soften until soft enough to easily scoop.
- Place ice cream scoop onto upside-down cookie. Place another cookie on top and gently press. Wrap with plastic wrap.
- Immediately place in freezer and repeat with remaining cookies and ice cream. Freeze until firm for easy eating.
